If you already own a “smart device” (e.g. a watch that can track steps or your sleep), GadgetBridge is a FOSS app that can communicate with various devices and track these things for you (and export it if you like spreadsheets)

Since you are thinking about getting a new device, check out this supported page for gadgetbridge. I’ve been using Amazfit watch, totally offline after first setup and works absolutely fine

Their hardware support is quite good, I still use my old watch I bought many years ago on sale (it was already old stock by then) so you don’t really need anything new or fancy (and expensive)

Not exactly what you asked for but I use Simple Time Tracker for reading.

I think it has some automated function to track automatically based on some android events (Such as start or stopping a specific app) but I start/stop each reading session manually since I don’t read using the same device.

You can create different activities to track and assign tags which I do (1 tag = 1 book) and then see statistics on per activity / tag / time period.

It cannot track heartbeat or steps, it can arguably and inaccurately track sleep if you start and stop manually.

If you find any use in correlating time tracking to health (time in the gym, time doom scrolling, or what not), it may serve you some purpose.

It doesn’t know anything about calories or sleep hours or exercise, it’s a time tracking app.
